One note is to be carful about not pushing either dog too much yet, as they are young dogs that are going to grow up to be larger, and are crossed with breeds known for Hip Dysplasia. Pulling can stress hips, so be carefull for the first year at least- no really heavy pulling, or you can do serious, and permanent damage to your dogs. You are also lucky to have your dogs crossed with breeds known for intelligence. GSD's are fairly smart, and want to please. I have a friend with a GSD/Husky cross that is a HORSE of a dog, and not the britest dog around, but when things get sticky on the trail, boy can he get you out of it, not fast, but reliably. I was skijoring with her once, and each of us had 1 dog, and my dog slipped his harness 3 miles from home, and left me there in the middle of nowhere dogless. This Shepard pulled both my friend and I home- for 3 miles- at a nice trot, without putting out any extra effort. Labs tend to do well skijoring, I've seen many doing well, and theres no reason you couldnt do mushing with your dogs, just be sure to accomidate for different gaits of each. You lab will have a much shorter gait than your shepard.
